Today was another great day. I spent the morning getting packed up and organized for the week.
It was beautiful outside, so Andrew and I decided to grab a quick lunch and spend some time at the park before I had to head back to Huntsville for the week.
Lunch was my favourite sub from Subway. Buffalo chicken on brown, all the veggies except olives and onions and a line of ranch. YUM!![]()
And one chocolate chip cookie.
We spent some time playing Jersey’s favorite game. Fetch.
That girl lives up to her breed, and loooves to retrieve.
Then we relaxed.
And I gave Jersey lots of love. There is a very good chance I won’t see her until July 2nd.![]()

We tried to test out the timer on my camera.
Take #1 = disaster.
Take #2 = we look great, but Jersey isn’t looking at the camera!
Take # 3 = Jersey looks adorable, Andrew looks ummm too happy and I’m not looking so hot either.
Take #4 = Perfect, except the piece of hair that fell in my face. Ah well, I’ll take it! ![]()
We said our goodbyes, and I hit the road.
I finally was able to get my Moose Money Shot! Woo hoot!
It was actually kind of surreal experience. He was just a little baby, so I was afraid that Momma Moose was lingering in the bushes waiting to attack me for getting to close to her precious baby boy.
I was able to get pretty close!
This is how I knew it was a boy.
I made a huge rookie/city girl mistake. When spotted the moose, I pulled over and put my window down thinking I would just be able to shoot out the window. When I got brave enough to leave the car, I didn’t put my window up. I was out of the car for about 5 minutes taking pictures. In that short time, my car got completely FILLED with black flies. I spent the last hour of my drive getting eaten ALIVE! Stupid city girl.
I arrived at my condo starving, so I whipped up a quick meal.
I jazzed up a grocery store salad. I started with a “Country Salad” Lettuce, mandarins, celery, cranberries and almonds.
Then added some extras: red/green pepper, cheddar, raisins.
Andrew BBQed me some chicken breasts to bring back, so I added one and tossed it in some light poppy seed dressing. It was delicious!
Its the start of another week. Looking forward to some routine, healthy eating and a ton of workouts!
Now I must unpack. Goodnight!

I am so proud of your away-from-home eats, my friend. I would probably wallow in self pity and eat crap every night.
My mom got way too close to a moose at Mount Ranier a few (11!!!) years ago to take a picture. We watched the video not too long ago- my dad telling her in a calm panic to "back away from the wild animal." hilarious!

I looooove Subway cookies. Your picture just reminded me of that! I always get toasted subs and the heat in the bag melts the chocolate in the cookie and just....YUM! tastes like fresh out of the oven!
