It was 30 degrees outside today.
It was about 50 degrees at step class tonight.
I was soaked to the bone afterwards. I have to say, Body Step is starting to grow on me. There is a lack of punching/kicking, and a little too much clapping and hamstring curls… but hey, it makes me sweat my ass off and gets my heart pounding!
When I was at my absolute skinniest, I was eating salad for at least one meal a day. This week, I decided I will return to my skinny mini eating habits. Its going to be a hot week, so I can think of a better time to rekindle my friendship with SALAD!
Prettied up for pictures: Iceburg lettuce, grape tomatoes, cucumbers, red-green-yellow peppers, pumpkin seeds and shredded old cheddar.
I added a chicken breast with a little general tso’s sauce, and tossed the salad in a one tbsp light poppy seed dressing.
My goal this week is to create a different salad combination each night this week…. with a little help from you guys:

I love how versatile salad is! My favorite as of yet is the spinach/sunflower seed/butternut squash one that I recently posted about. So filling!
Not trying to nag here, but just be careful if you're picking up habits *only* for the sake of being skinny. Wouldn't want to see anything unhealthy become of it. You seem to have such a great head on your shoulders, so I'm sure you've got it under control ;)
LOVE salads. My fave right now is a homemade version of Applebee's Asian salad. Mmmmm...:)
My favorite is Greek salad,ripe tomatoes, feta, black olives. red onion and cucumbers ...super yummy!

Taco salad (sans tortillas) with spinach or lettuce, black beans, corn, red onion, peppers, cheese, salsa and AVOCADO!
Green salad with granny smith apples, raisins, walnuts, feta cheese and raspberry vinigairette
OR a regular salad with any veggies, some flaked tuna, cheese and a homemade dressing with balsamic vinegar, EVOO, Frank's and garlic

mmmmm! I am trying to eat a salad for lunch every day to make sure I get my veggies.
I've been thinking lately that I should try to eat more salads, too! I love any salad that has avocado in it, pretty much. :)
spinach, strawberries, maple pecans and crumbled goat cheese with some balsamic dressing = yummo!!!!!
Don't have a favorite, just love to throw things in with the lettuce and hope it tastes good (usually it does!).
Leave out the chicken and throw in some hummus and chickpeas and that's a fav salad of mine. Also:
-greens, goat cheese, white balsamic vinegar, pumpkin seeds, craisins.
-greens, mint, cilantro, bean sprouts, peppers, carrots and a dressing of soya, brn sugar, almond oil.
That looks yummy!
I love me my salad with avocado, tomatoes, cuckes, feta or chèvre and some apple cider vinaigrette... maybe some toasted pecans too if I'm in the mood...
I'm a total salad junkie - but some of my staple toppings are:
white beans
avocado
pine nuts
feta cheese/goat cheese
red pepper
red onion
cucumber
tomato
cranberries
pecan
dollops of greek yogurt
I make almost a different one every day! And they are so filling!
I think any salad is delicious with avocado!
YUM! That looks so good. I struggle coming up with good salad combos so I'm excited to hear about yours!!
I haven't met a caesar salad that I didn't like..in the meantime I'm not that adventerous with my salads (if I have one).
I actually just had one the other day out at supper which was actually quite delish..spring mix with marinated veggies (red, yellow & green pepper, portabella mushrooms & zuchinni) with a red wine vinegarette topped with grilled chicken breast and provolone cheese...It was YUM! and this is coming from a non-salad eater :)
One of my favs, is pepper salad, you add cut up red, orange, yellow and green peppers as you wish, red onion, and Italian or balsamic dressing.
Another is broccoli salad, one cut up floret with sun flower seeds, and dressing is low fat mayo, lemon juice, vinegar, a bit of of maple syrup or sugar.
And one I make often is a garden salad, with red cabbage, carrots, echalotte, cherry tomatoes, cucumbers and chick pea, with oil and vinegar dressing...
