Like its nobody’s business

I had a pretty productive day at the office. After work I decided to channel my inner Jane Fonda and hit up Body Step. I know I said it last week, but holy man… that class PUSHES me. I left the 60 min class completely drenched with sweat, and panting like it was nobody’s business!

I raced back to my condo and had the best. shower. ever.

I chose to take advantage of the fact that I’m husbandless, and make something I’ve been meaning to try forever. Andrew hates beans… so I wouldn’t make this at home!

I’ve been seeing this combination over at Healthy Tipping Point for ages. I figured, hey, I like sweet potatoes and I like baked beans. This flavour combination did not disappoint. Of course, I had to top it with a blob of margarine. For some reason, I love margarine on baked beans.

Oh the side: Some Guiltless Gourmet Black Bean Chippies and some of the Sweet Tomato Salsa that the lovely Krissie sent me in our cross border exchange.IMG_3940

My eyes were definitely bigger than my stomach. I’m filled to the brim.

I’m still feeling pretty craptastic, so I’m going to medicate with cold meds and get cozy in bed for the night. I hard as a push myself sometimes, I need to remember that rest is equally as important.

Did anyone catch TLC’s Best Food Ever tonight? It was the “Sensational Sandwiches” episode. I couldn’t decide if I wanted to drool or throw up. Some of them looked amazing, but then some of them just looked disgusting!

What is your favourite odd sandwich combo? Mine is old cheddar, Sabra Roasted Red Pepper hummus, and avocado. Sounds gross, but tastes like heaven!

I wondered if that sweet potato/bean combo was actually good, thanks!

Lately I'm MAJORLY into putting cream cheese on any and all sandwiches/burgers which isn't "odd", but oh sooo good!

I am all over sandwiches of late.
Multigrain bread+greens+humus is a fav of late.
Same with turkey, avocado, jalapeno havarti.
Now I'm hungry...

I've been meaning to do the whole sweet potato/baked beans combo for a while but like you, my hubby doesn't like baked beans! So on my next lone night I'm sooo hitting that.
