Help!

My dear blog friends, I am in dire need of your help.

This is my kitchen for the next month.

I’m asking you for some meal ideas.

Something that is healthy and that can be made using a hot plate, microwave and a toaster.

Suggestions?

Do you like stir fries? A lot??? How about soups - just when the weather is starting to get warmer, I know...
Always my fall back as a student coping with student accomodation!

It's not soooo bad -- the only thing you're really missing is an oven.

You can do:
-Wraps
-Sandwiches
-Stirfries
-Scrambled Eggs / Omelettes
-Baked potatoes (in the microwave)
-Snack plates with veggies, hummus, etc.
-Delicious greek pitas with falafel (that's what I had last night so it's on my mind! haha)

You'll probably end up eating veggie a lot because meat will probably be the hardest thing to cook. Though if you can track down a Foreman Grill for the month you'd have a lot of options!

Get a rotisserie chicken and split it up. Use through the week in salads, sandwiches, wraps, soft tacos etc.
Use microwave for sweet potatoes, rice, oatmeal etc. You can make a bunch and just keep it in the freezer and reheat when you need it.
Keep dinners easier like chicken or tuna in salad with multigrain roll if need it or soup loaded with frozen veggies.

If you have room for a crock pot, take advantage of it! Recipes are all over lately for tasty crock pot meals. Good luck!

Dump the toaster and buy (or borrow) a toaster oven. I went through a kitchen reno where we set up a kitchen in the basement and we would have died without the toaster oven and a slow cooker. Hit a yard sale and grab a Foreman and a toaster oven. Also, welcome to salad season! You can grill up (or pan fry if all else fails) some chicken, steak or tofu and throw it on big ass salads.

Or you can live off of wine. That's what I would do.

I would definitely look into buying a toaster oven and a little grill (I've always wanted one of those).

The weather is getting warmer anyway. You won't want to use an oven at that point, I am sure. :)

I have the tiniest of kitchens and only use my oven to bake bigger items like casseroles and lasagnas (and evil treats), don't have a grill and somehow manage to survive. AND I lived without a microwave for a year.

It can be done. Just adapt your faves to your tiny surroundings and learn how to cook in one pot/fry pan.

egg puffs in the microwave! covered with salsa = heaven :)
lotsa big salads with canned beans for protein...
smoothies! If you have a blender

I microwave sweet potatoes a lot, and while they are cooking I saute in olive oil things like broccoli,or spinach and tofu,sometimes with kidney beans and add in maple syrup and sriracha sauce-I pour veggies or veggie and beans over the sweet potato and sprinle goats cheese feta(plain PC brand)...divine and spicy sweey-yum!Super quick and healthy too!

Summer is coming - so salads and soups! Healthy and delish. I have steamer dish for my microwave that I use to steam veggies in all of the time. And can you bring your crock pot? You could make something for the week like soups and stews. You can pan "fry" most things that you would do in the oven like meats - just use a bit of pam or olive oil to keep calories down. Baking - difficult. But baked goods are a big no-no for me anyway. Just focus on everything you can do, not things that you can't.

I agree with those who said get a toaster oven and a foreman grill. You're going to be there for a while and those two appliances will do you a world of good!

Totally get a toaster oven. The the only things you can't make are pizza's bigger than mini's (but bagel pizza still fit!) and meat based roasted dishes and lasagna. You can still roast up veggies - and re-heat in microwave if necessary.

On the bright side - toaster ovens are great for portion control for fries :)
