Healthy Slow Cooker Challenge

The lovely Ali from Fat to Fit is running a 7 day Healthy Slow Cooker Challenge. When she tweeted that she was looking for contributors, I jumped at the chance.

I loooove my slow cooker and use it quite often, so when it came time to decide what to make, I just couldn’t make up my mind so I thought I’d share 2 different recipes.

If you’ve been reading for a while, you know that I love to ‘healthify’ things.  I present you with: Amy’s Healthified Pulled Pork.

Pulled pork can be pretty calorie/fat dense mainly due to the fact that its made with a fatty cut of pork ~ usually a pork shoulder.

I substituted a pork tenderloin, and simply sprinkled it with salt and pepper and tossed it in the slow cooker.

My secret to keep it moist? I cooked it on low in a can of diet root beer!

Let the pork cook for about 8-9 hours. Remove from slow cooker, drain the juices, reserve and set aside.

Shred the pork using 2 forks.

Put it all back in the slow cooker, and add some of your favourite BBQ sauce. Add a bit of the juices to moisten it up, and voila. Delicious, moist pulled pork made without the fatty cut!

I cannot take credit for the next slow cooker recipe. I’ve posted about it many, many times… but its so great I have to share again.

Weight Watchers Moroccan Stew.

I served mine with 1/3 cup brown rice, and topped it with a little bit of fat free sour cream.

The best part about this stew is that it makes great leftovers. It’s one of the dishes that gets more flavourful the longer it sits. I can’t wait to dig in for lunch tomorrow!

I had some leftover buttermilk which was needing to be used up, so I made a healthified version Pioneer Woman’s biscuits. While I absolutely love her, I actually didn’t like her recipe for biscuits. They had an odd smell to them, and were full of shortening and butter.

Tonight I simply googled “Low Fat Tea Biscuits” and found this recipe. They came out  great tasting and calorie friendly. I’ll definitely be making this recipe again!

I am going to try the ww recipe - looks good - Thanks.

We don't eat pork but I do the BBQ with chicken breasts and it's great on salads, sandwiches, in roll ups and makes great leftovers with so many uses.

I love my crockpots too :)

I had found that stew recipe myself, and wondered if it would be any good. Hello Friday dinner!
