Despite having the greatest of intentions to stay home and rest today, I ended up going into the office. After about 395 phone calls and an offer to come pick me up I just went.
I ate breakfast kind of late, so I made a salad in a glass to go.
1 cup 1% milk, 4 frozen strawberries, 1/2 a banana, and a huge handful of spinach.
The worst part about today was the fact that the colleague that offered to come get me couldn’t drive me home. That meant I was forced to stay at the office until 6:30pm when Andrew was able to pick me up. This would have worked out ok, except for the fact our servers went down at 5h30pm so I was pretty much stuck at work with NOTHING to do.
Dinner was pretty much exactly the same as the other night. I bought a huge bag of avocados at Costco. They are so much cheaper there, but its kind of hard to use them up before they are past their prime.
Slow cooker salsa chicken, couscous pilaf (red pepper, onion, mushrooms, and a cup of frozen mixed veg) topped with greek yogurt and 1/2 a ‘cado. Deeeelicious, nutritious AND filling.
Dessert: A mug of gingerbread tea, and 5 Arrowroot cookies. Tasha blogged about arrowroots the other night, and I copied her. 5 cookies are only 150 calories, and taste absolutely heavenly dipped in tea.
I don’t have any exercise to blog about because I’m a gimp, so I thought I’d show you my breakky for tomorrow.
A Breakfast Cookie to go!
1/3 cup oats, 1 tbsp pb, 1/2 a scoop plain protein powder, chia seeds, raisins, pumpkin seeds, cinnamon and pumpkin purée.
In regards to my ankle injury, its definitely not feeling or looking any better today. I had to shove my foot into a running shoe to go to work. My ankle was literally protruding out of my shoe.
Kinda felt like this:
Hot eh?

OUCHIE! just catching up on your posts.
Remember that food comes in handy with injuries.... R.I.C.E

also - Arnica - is a herb that you get in a lotion - topical - really helps with swelling and taking away bruising (not egos!).
:) arrowroots eh... might have to get some of those.
Pretty sad that no one from your office could drive you home. Be careful about pushing it too much. If you need to stay home, stay home ... and turn off your phone. Your work will get by without you for a day. If you were in the hospital, or worse, they'd figure it out. That was a pretty bad fall you took and you need to rest it properly.
The arrowroots look yummy! I haven't had those in years.
hahahahhaa. Not at you. Cankles!!
Hope you feel better soon honey.
Dinner looked freaking deeelish.
May or may not have decided to make some salsa chicken tonight. Salsa obsession, here I come.
Your dinner looked amazing :)
LOL @ the Cankles. It's not like you have real cankles. Yours will disappear in a few days unlike that poor lady. ;)
I am SOOO buying Arrowroots tonight. Mmm mm
Sorry you're hurting - take the time to heal, the exercise will come back before you know it!
Also, I meant to ask before, but you should share that recipie for the Salsa Chicken a-la slow cooker please!!
Feel better!
We should get together and split Costco produce. We went last night and they had bananas for $2. But there was no way we'd get through them as they're already ripe. Not to mention that we usually can only get through 4 of them in a week and not 10... lol.
Oprah taught me yesterday how to reduce the look of cankles - shoe booties instead of actual booties.
but that's an aside. your dessert sounds way better than mine - a spoonful of nutella and cranberry raspberry juice.
p.s. M likes your post title. :)
Oh, that picture of the cankles is hilarious!
Hopefully you can move around easier today.
Arrowroots are now my go to snack in the afternoon with tea.
