My ass was kicked at Body Pump tonight. I upped my weights for all the upper body tracks, and it burned baby! So much so, that it hurt to devein shrimp afterwards!
Speaking of shrimp, may I present:
Adapted from this recipe from Kraft.
Ingredients
- 1/2cup Catalina Dressing
- 2 Tbsp. Peanut Butter (I used chunky)
- 2 Tbsp. soy sauce
- 1 Tbsp. oil, divided
- 30 shrimpies
- 4 cups mixed fresh vegetables (I used broccoli, red/yellow peppers, zuchinni, onion and mushrooms
- brown rice
- cilantro
- peanuts
Make it
MIX dressing, peanut butter, soy sauce and crushed red pepper; set aside. Heat 2 tsp. of the oil in large nonstick skillet on medium-high heat. Add shrimp; cook and stir 5 to 8 min. Transfer shrimp a to large serving bowl; cover to keep warm.
HEAT remaining 1 tsp. oil in same skillet on medium-high heat. Add veggies; cook and stir 5 min. or until vegetables are crisp-tender.
ADD vegetables and sauce mixture to shrimp and mix lightly.
SERVE over a bed of brown rice, and top with chopped peanuts and cilantro. YUM!
There may or may not be a piece of apple pie in my near future. Its hubby’s favourite dessert in the whole world, and it was on sale at Loblaws. He’s a lucky man.

Mmmm I had shrimp (+scallop) stir fry tonight too, it was yummy!! Seems its all the rage around blogland lately eh? :)

I think I have all the ingredients for that stir fry (except the dressing). I may have to make it this weekend! Yum!
