Pumpkin Oats

I have a lot of new readers of late  (Hi!! WELCOME!) who have been inquiring about my pumpkin oats. I’m happy to share the method behind my madness.

Ingredients:

1 cup oats (enough for 2 people)

1 cup of almond breeze

1 cup waterIMG_1365

1 sliced banana

1/2 cup pure pumpkin

Cinnamon/nutmeg to taste.

Mix all ingredients and cook over medium heat for approx 5 mins stirring continuously.

I find this sweet enough, but you may want to add some brown sugar or agave.

I like to serve mine with some fun toppings: Flax seed, walnuts, coconut, and skor bits were the toppings of choice for this particular bowl.
