Today was the office potluck. Being the new girl, I wanted to impress!
I made some pumpkin dip*, apple slices, and cinnamon pita strips (a la Oh She Glows)
* I followed this recipe lightly. I didn’t use any powdered sugar, just sweetened it with a little agave. Essentially I just blended ff cream cheese, pumpkin, ff cool whip and added some spices. Delicious AND healthy!
I didn’t eat anything except a few veggies and one (1!!!) little chocolate truffle. I was pretty proud of myself.
I did enjoy a small snack plate when I got home. But I didn’t really eat all day with the exception of a banana and a coffee.
My new job is going AMAZING. I am so honoured, proud and excited to work with such a dedicated team. Everyone is very friendly and welcoming. The other plus side, is the fact I started around Christmas so its generally a festive time, and perfect for mingling. Loving it!
Still working on getting the gym thing sorted out. Its really not convenient to get to at all. I’ll work on it more next week. The good news is, I’ve managed to get some sort of exercise in every day this week, albeit, I’ve declared today a day if rest.
I’m too lazy to cook anything tonight. I think it might be an Annie’s Mac’n’cheese night with some broccoli. We shall see.
Happy Friday to all.
