nothing to eat

Remember those days when you were young, and you’d be whining to your parents that there was nothing to eat? That’s how I felt tonight when I was trying to come up with something for dinner. Andrew and I were lying on the couch, trying to decide what to eat as we’d have to go out to get something.

Turns out, we were able to scrounge up a pretty fabulous meal without leaving the house.

I whipped up some pesto mix using Epicure Selection’s mix. Last time I made it, I didn’t love it. I found it too grainy. However, this time I gave it a whirl in my Magic Bullet and the texture was fantastic!

I spread it on some butterflied chicken boobies.

Topped it with some orange pepper slices, and goat cheese.

Brushed with egg wash, and topped with a homemade topping. Bread crumbs, parmesan and a little of the pesto mix.

I had some peppers and mushrooms, so I sautéed them in a little EVOO, mashed some potatoes and microwaved a squash. It was a fantastic meal, considering I thought we had no food in the house!

All in all, today was a wonderful day. I met my buddy Lisa this morning for an upper body workout, Body Attack and coffee. This is totally my idea of the perfect Saturday morning date. Gym, coffee and awesome girl time!

Its only 7h30pm and I’m totally exhausted. Think it’ll be an early night. Man, I’m old.

Hmmm that looks like an AMAZING dinner considering you didn't think you had anything to eat! Yum yum!

Chicken looks delicious. I think I'm going to give that a try. I have a little leftover pesto from the other night. Thanks for the great idea.

Great job on being creative in the kitchen, it looks fantastic! I loved doing gym and girl time afterwards on Sat mornings.

Yum! I love when meals can be created without a trip to the store. Yours looks fantastic!
My kids are always saying that there is nothing to eat - lol! Darn kids!

Dinner looks great. When my guy and I don't feel like cooking, we usually will make breakfast for dinner because it so fast. Omelets with veggies and english muffins are our go-to!

You can count on Epicure to give something a boost or to make something out of nothing! I've got a drawer full of their stuff and use their products almost every day!
