The weeeeekend is here!
Tonight I recreated a pub favorite, with a healthy twist. Baked chicken fingers and sweet potato fries.
I cut up a chicken breast, coated it with egg wash and tossed it in some ground Fibre One, parmesan, and a few Kashi crackers.
Served it with 1/4 of a sweet potato sliced into fries, a side of broccoli and cauliflower, and a side of honey for dipping the chicken fingers. YUM!
I hit up Body Pump after work. It was a good class, but slightly distracting because the instructor could not stay on the beat. Soo frustrating!!
In other news, I haven’t really mentioned this.

I was sooo happy to see them win, but I will admit, that I’m pretty happy that the post season is over. Staying up until after midnight is rough on a girl.

Mmmm. We had homemade chicken fingers the other night and they were so good. Such a good healthy alternative to deep fried fingers.
