all things green

Tonight’s dinner was GREEN, yet totally delicious.

Admittedly I went a little crazy in the produce department when I did groceries on Sunday. With only 2 people in the household, it sometimes makes it tricky to use them all up before they go bad.

In particular I had some spinach that was definitely on its last legs. I decided to make some spinach pesto. Into the blender went a huge handful of spinach, walnuts, parmesan, EVOO and a little of the Epicure Pesto mix.

I should note, I definitely don’t condone kitties on the counter but I was SHOCKED when I turned around and there was Lewis eating SPINACH!! Who knew cats liked it?

IMG_3393  I think he was grumpy I shooed him off the counter. Later when I turned around this is what I saw. That doesn't look like a happy face.

Back to dinner… I cooked up some whole wheat rotini, and 2 chopped chicken breasts for some protein. Once the pasta was cooked I tossed it in the pesto with a little pasta water, added some more spinach to wilt and threw in the chicken.

After a taste test, I determined it was lacking in the ‘creaminess’ department so I added a little bit jarred alfredo sauce to cream it up a notch. Perfection!

I had also thrown some veggies in the oven to roast: Mushrooms, zucchini, grape tomatoes and red and green peppers.

I served them over top 1 cup of green pasta.

Definitely a successful, healthy AND filling dinner.

Not much else to say tonight. I went to spin class tonight, and I was a sweat factory when was over as per usual.

Even though I had yesterday off, I’m absolutely thrilled the weekend is almost upon us.

Stay tuned for tomorrow. I have 2 big confessions.

Love the cats on the counter! I don't normally feed my cats people food, but last night I let my older cat have a taste of my spinach filled pasta sauce! And she loved it! Weird!

Altho my mom does have a cat that will eat cantaloupe until you stop feeding it to him!

Lewis does not look impressed. Too cute! Sometimes animals eat things you would never expect them to like...

My kitty likes spinach, too. I gave him some cooked spinach once, and was also surprised to see that he ate it. Now I want to give him some fresh to see if he likes it! Hmmm, maybe I'll go get some tomorrow, lol.

My furbabies will "hunt and kill" green olives! I think it's the salt, but I can't leave them on a plate and turn my back!
The spinach pesto looked really good too...will have to try that.

Haha, no I can seriously say that I wouldn't have to worry about fighting for my spinach from Chandler! The spinach pesto looks delish!

Yum yum! that looks great! nice way to use up the last of the spinach!
We have the same prob with veggies in our household - especially since Dave will *not* eat raw veggies :)

Very yummy looking...How do you do your roast veggies, I find mine swim in water and are so soggy...have not mastered it yet.
