Holy Yum!

My supper tonight was ah-friggin-mazing!

Curry shrimp skewers, 1/2 cup rice, grilled asparagus and stuffed mushrooms.

For the mushroom caps I chopped the stems, added a little Kraft Fig Balsamic dressing and goat cheese. Stuffed them into the caps and grilled for about 10 mins.

The marinade for the shrimp skewers was EVOO, curry powder, lime juice, lime zest, cilantro and some light coconut milk. I think next time I’d add some S&P and some red pepper flakes… but it was delicious tonight as is!

Life got busy this weekend, so I’m behind on the Weekly Challenge results. I’ll have ‘em posted ASAP though.

whoa! that dinner is amazing!! I want to eat like that. Instead I had a plum, some green grapes, and a bowl of cereal. mmmmm to have YOUR dinner?!?! MMMMMMMMM!!!!!!!!!!

Yum! I love mushrooms but never think to stuff them. I'm gonna have to try that soon.

Jeez that's a good one, Amy. I was planning on making shrimp tonight too - I'm stealing that one, girl. I'll probably have to wait on the mushroom caps though - the goat cheese would put me slightly over my points. Love those as an appie idea. Last We had chicken breast with Tandoori spice, grilled asparagus with lemon and a black bean and basmati pilaf. Yummy too but I'm craving curry and coconut milk tonight...

Yummy! I have some fig spread that I like to eat on top of some goat cheese, but I bet it would be amazing stuffed in mushrooms. Thanks for the great idea!
