Operation Beautiful and Stuffed Peppers

I have continued to be moved by all the notes posted on Operation Beautiful. I was reading Oh She Glows today, and Angela wrote about her insecurities about sweating. I too, am very insecure about my sweat glands. I sweat like a madwoman, and often make a bee line to the changeroom after my workout to avoid too many people seeing my soaked t-shirt and flushed face.

Today I decided to embrace my beautiful, sweaty self.


I read about stuffed peppers on someone's blog... I believe it might have been Ashley's. Ever since, I've been CRAVING them!

Today I decided to create my own! Into the skillet went:
1/2 lb extra lean ground beef
1 turkey/chicken sausage
chopped onion
zuchinni
red pepper
mushrooms
handful frozen edamame
frozen peas
1 can mixed beans
1 can of tomato soup.
I cut 2 green peppers in half, filled with the stuffing and topped with some shredded cheese. (no pic sorry!)
Its a kazillion degrees here today, so I opted to cook them on the grill so I didn't have to turn on the oven.

I also grilled up some asaparagus to serve with it. It was a great meal indeed!

**EDIT - YES, I typed suzhinni instead of asaparagus. Can you tell what veggie remains close to my heart?? **

Oh that looks soooo yummy!!!!

now i'm craving it! hopefully the pizza in the oven will do okay for now, but I may have to do some stuffed peppers tomorrow!

Okay I thought I was the only one who was insecure about sweating/being all red in the face. Apparently not. Thanks for that Amy. Sweaty girls ARE hot!!!!

Those stuffed peppers look amazing.

Mmm those stuffed peppers do look quite yummy! I'm pretty sure they were on Ash's blog... but hers were a slow cooker version. I plan on making them very soon!

How funny, I've been into trying new recipes lately, and one of the ones I have been considering is stuffed peppers.

Mmmm, I love zucchini. I wish mine in my garden would grow already!

As for the sweating, I'm a big fan of Richard Simmons' DVDs (quit laughing at me!), and he often will do a move with the hands and he'll say, "Okay, now sparkle!" He's not talking about sweating, but now I've taken to calling it "sparkling" when I do his DVDs and sweat. So that's how I refer to it. :o)

I LOVE your shine sticky!!! It's perfect!!! I did my first sticky for Operation Beautiful today...it feels good!!!

Your peppers look yummy!!! But une question...did you mean zucchini or asparagus???

Sweating, and I mean the good old, dripping, soaked clothes, looks like you swam fully dressed, kind sweating is so awesomely good for you!!! I just think of all the toxins and blech that is pouring out of my body because I am working it hard. I run by a river at lunch and do get the "did you fall in" question a lot, but I love how I feel fully drenched. Sweat on, beautiful women, sweat on!!

Is it weird that I LOVE getting super sweaty when I work out, it makes me feel so strong. Another blogger posted some delish looking stuffed peppers, yours look really good too...I may have to make those next week.

i dont know if i ever commented on your blog, but i read it everyday. i totally associate with the sweat issue! but, a few weeks ago i ordered the ipod + nike thing for shoes that arent nike- and in the instructions was this page. i cant post a pic on your comments, but ill post a link to it. its a picture of the page which i put on my refrigerator. totally applicable here, i think.

mmm stuffed peppers are amazing! So glad I could inspire you. We hadn't had them in soooo long and they were incredibly yummy!!

I have to send you the recipe for a stuffed pepper soup that is super low in Points and incredibly easy to make. It's on my computer at work so I will definitely send!
