Well fast forward 16 weeks and a half marathon. Said skinny mini spin instructor's name is Crystallina and she's actually became a wonderful friend of mine.
She kicks my ass at spin class, I kick her ass running. Its a win-win for both of us.
Not only is she a wicked spin instructor, she also loves two other thing that I hold very close to my heart: Rent and FOOD!
On Sunday the two of us set out for a 7k LSD (it was supposed to be 13k, but I chicken out due to the lack of oxygen going through my nostrils) and then returned to her place to make some healthy shellfish themed nibbles whilst singing along to the beautiful harmonies of Rent.
On the menu:
First up was a warm spinach/crab dip served with a walnut honey foccacia bread.

We also healthified a favorite we both enjoyed while in Boston (on separate trips, ironicaly only a week apart though!) Baked Oysters!
We also recreated a healthier version of coconut shrimp, with a pineapple dipping sauce. These were a HUGE hit.
It was so fun to play in the kitchen with another 'foodie' type! I should also note we themed our meal based on the lack of a boyfriend at Crys' house for the weekend as he has an allergy to shellfish, so she dosn't get to have it much!
Not only do we have Rent, running, spinning and food in common, but we also have BLOGGING in common. Crys writes her own blog which can be found here.
Now, here's the best part. Crys wrote a few guest posts to keep you all entertained while I'm away in TO with my fellow bloggers. Rest assured, you will have some great reading material to keep you occupied. I believe my loving husband has also has big blogging plans during my leave of absense.... and of course I'll be bringing my laptoperoonie so you can keep tabs on the bloggers at play!

Becci: coconut shrimp + pineapple dipping sauce was surprisingly easy (when you have no recipe).
We used:
- raw shrimp, deveined, deshelled, tails left on.
- seasoned bread crumbs (we used a pack of southwestern style, btu they were a little salty - any kind will do) + shredded coconut
- beaten egg with a teeny bit of milk beaten in.
directions: dip shrimp in egg mix, then in crumb mix. bake.
pineapple dipping sauce:
- some crushed pineapple + juice from a can
- some coconut milk, from a can
- some sugar, to taste
- some cornstarch, until it thickens.
directions: heat all ingredients in a saucepan.
THAT EASY.
