A green supper

Green seems to be the theme in the blogosphere of late…. so my supper seemed to fit the bill.IMG_0504

I made pesto using Epicure’s Pesto Mix, but to kick it up a notch I added some fresh spinach and walnuts in addition to pine nuts and parmesan. I was on an Epicure kick, so I added some of their Cheddar Potato Topper to my whipped taters. No meal is complete without veggies; on the side roasted asparagus. YUM.

Today’s activity consisted of a brutal (read: amazing) upper body/core workout with Lisa, a 50 min road drills spinning class and a few abs to cool down. Weee!!

Not much else to report. My life is pretty dull of late.

I need to start making roasted asparagus. I've only had asparagus once and it ok but when I see people posting their asparagus, it looks sooo good!
