My legs are pretty much toast from yesterdays 18k... today is a well deserved day of rest. Jersey and I headed out for a glorious hour long walk in the sunshine, while Lewis lounged by the pool! :)

Today's supper was a little on the gluttonous side... but I think I deserved it. One M&M Meats veggie burger, and a Lean Links sausage also from M&M.

Served with a side salad, topped with sauteed crunchy tofu bits. Andrew asked what kind of croutons they were.... I love tricking him into eating things. :)

I also wanted to show you my delicious supper from last night. I made pesto using spinach, EVOO, garlic, walnuts and a little parmesan. One of my running buddies mentionned spinach pesto while were out running, and I thought it would be the perfect way to use up my spinach before it went bad. The flavour was SPOT on. I served it over rotini, tossed with zuchinni and some diced chicken breast.

All in all, a good day. Tomomorrow is opening day for my baseball team. I'm PUMPED!

Pesto is one of the things I always mean to make, then forget...I'll have to put that in the back of my brain for the next time I buy too much spinach.
