Hills

Jersey and I did 7 hill repeats for a total of 8.5k in 1h 07 mins today. She was the star of the Running Room once again, as the cute-0-meter was through the roof! :)

Took me a while to get motivated, but once I got going I was feeling grrrrrrreat!

I have my lazy lasagna in the oven for supper. I'm excited to have a carb-alcious feast as I'm completely famished. Thats the major downfall of all this running that I do. I can't eat before as I get pukey, so it makes for some late night suppers. 

The scale and I currently aren't on speaking terms, so I won't woe you with my battle with numbers.

With the Easter long weekend rapidly approaching, I'm starting to ponder what to bring to my cousin's house for dinner. She'll be making a turkey, broccoli casserole, baked beans, taters, and plenty of desert. I'm planning to bring a side or salad. I brought a sweet potato casserole at Christmas.... and found out none of my family are keen on sweet taters. 

Question: What is your favorite salad or side dish? 

Oh, and for the record... I've been TOTALLY chocolate free since the beginning of Lent. :)

Wow, I would die without my chocolate! Good for you!

Right now my favorite salad is greens with dried cranberries, goat cheese and a balsamic vinegrette, super easy to make. It's also good with pears and walnuts. Love anything with goat cheese. YUM!

Hey, the scale isn't always your friend! It's how you're feeling, how your clothes are fitting. Love that you can exercise with your pup....all my "adopted" dog (brother's who I'm dogsitting) wants to do is sleep & sniff telephone poles, lol!

I second the salad that Anne suggested, I love goat cheese too. I've done it with baby spinach, strawberries and toasted almonds.

I do lots of salad just to have some semblance of a healthy option just in case:
1. orzo pasta, zucchini, grape tomatoes, peppers, olive oil, goat cheese - can serve warm or cold
2. tomato, arugual, basil, balsamic and mozarella salad - not original but good.
3. an amazing dessert which sounds weird but is good is strawberries mixed with a small amount of balsamic vinegar and sugar.
Great - now I am hungry!

Yum....lasagna....Think that will be part of my menu next week.

Favorite salad is a tough one as I don't regularly eat salads (I don't like lettuce!)

Instead I use spinach usually matched up with red onion, mushrooms, peppers and honey dijon dressing.

Unfortunately I don't have near as many salads as I should.

Whoo Hooo for being chocolate free for lent. I gave up peanut butter and simply CANNOT WAIT for Sunday!!

I like pea salad - is that what it's called? It's a layered salad with peas (duh) lettuce, miracle whip, bacon bits, boiled eggs, cheese, onions. It's the bomb and so healthy for you (j/k). Seriously, my favorite though.
